Executive Chef
The Tradewinds Hotel is a vibrant venue located in a prime location in East Fremantle, comprising all day service in our large indoor/outdoor restaurant & bar, full room service offering and busy function trading across multiple meeting & function rooms.
We are seeking an Executive Chef to lead with precision and cook with passion as part of our senior leadership team. You will be a key player in developing an exciting new food and hospitality direction for the venue, working with a supportive team, to articulate, develop, and execute the concept.
As Executive Chef, you will hold full accountability for culinary direction and performance. This includes menu development, leadership, food safety, cost control and service delivery across the restaurant and functions. You will balance long term planning with being present on the tools and setting standards through action and leadership.

Key Responsibilities
- Lead, inspire and mentor a large kitchen team
- Design creative, seasonal menus aligned to brand, market and margin
- Oversee the kitchen and all conference, events and large-scale catering
- Drive kitchen governance including systems, compliance and food safety
- Manage food and labour costs within commercial targets
About You
- Proven experience as an Executive Chef
- Comfortable operating at both strategic and operational levels
- Strong leadership, structure and communication skills
- Passion for all things food, what’s on trend, inspired creations, local, regional, and seasonal produce
- Deep understanding of kitchen systems, compliance and cost control
- Hands on, visible leader who sets standards and develops people
- Relevant culinary qualifications and certifications
